Cacio E Pepe (Spaghetti w/ Pecorino & Black Pepper)
(serves 4-6)

NOTE: It is highly recommended to use Imported Pecorino Romano. Use small holes on box grated to grate cheese finely, and large holes to grate coarsely. For a slightly less rich dish, substitute half & half for heavy cream. Allow dish to rest briefly before serving so the sauce can thicken.

Ingredients:
• 6 ounces Pecorino Romano, 4oz finely grated (about 2 cups) and 2 oz coarsely grated (about 1 cup)
• 1 lb spaghetti
• table salt
• 2 tablespoons heavy cream
• 2 teaspoons extra-virgin olive oil
• 1.5 tsp finely ground black pepper

Directions:
1. Place finely grated Pecorino in medium bowl. Set Colander in large bowl.
2. Bring 2 qts. water to boil in large Dutch oven. Add Pasta and 1.5 tsp salt; cook, stirring frequently, until al dente. Drain pasta into colander set in bowl, reserving cooking water. Pour 1.5 cups cooking water into liquid measuring cup and discard remainder; return pasta to now empty bowl.
3. Slowly whisk 1 cup reserved pasta cooking water into finely grated Pecorino until smooth. Whisk in cream, oil, and black pepper. Gradually pour cheese mixture over pasta, tossing to coat. Let pasta rest 1-2 mins, tossing frequently, adjusting consistency with remaining 1/2 cup reserved pasta water. Serve, passing coarsely grated Pecorino separately.

Mulled Wine
Ingredients:
• One bottle of Whitecliff Ridgewine Red
• 1/4 cup of Whitecliff Brandy(optional)
• 1 Sealed Bag of Mulling Spices
• 1 cup sugar
• One sliced orange and lemon
• Vanilla bean to taste (optional)
To make the perfect cup of mulled wine, combine all ingredients in either a large pot or a slow cooker. Gently warm the ingredients on low heat (avoid boiling), for 20-25 minutes. Serves 4-6

Hot Eggnog
Ingredients:
• 1 tbs. Sugar
• 3 oz. Whitecliff Brandy
• Pinch Nutmeg
• 1 Egg
• Pinch of Salt
• 1 cup Hot Milk
Place egg and salt in a mixing bowl and beat until egg is thick; add sugar and beat until blended. Add hot milk and brandy, mix well by hand or in a blender, and pour into a warmed mug. Sprinkle with ground nutmeg.
